Cauliflower Question and Answers
WHY ARE MY CAULIFLOWER HEADS PINK?
Cauliflowers naturally produce pigments that colour the cauliflower
head. The pigment protects it from damage by the sun. I bet the leaves
haven't been growing over the cauliflower head, exposing it the sun.
Apparently the pigment produced contains anti-oxidants which are good
for you. So I would eat it and enjoy! If you want perfectly white
cauliflowers then make sure the leaves cover the head, this is known as
blanching.
